Creamy spinach & white bean stew

A hearty, creamy stew filled with nutrient-rich spinach and protein-packed white beans, offering a delicious way to support recovery (serves two).

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 400g white beans (cooked or canned)
  • 100g spinach
  • 500ml vegetable broth
  • 250ml coconut milk
  • 1 tsp thyme

Instructions:

  1. Heat olive oil in a pot over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened and translucent.
  2. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
  3. Stir in the white beans and thyme, allowing them to cook for a minute before adding the vegetable broth. Bring to a simmer and let cook for 10 minutes to allow the flavors to meld.
  4. Pour in the coconut milk, stirring to combine. Let the stew simmer for another 5 minutes until heated through.
  5. Stir in the spinach and cook for an additional 3-4 minutes until the spinach is wilted (if using fresh) or fully heated through (if using frozen).
  6. Season with salt and pepper to taste, and serve warm.
