Ingredients:
- 2 bananas, mashed
- 120g flour
- 60ml honey
- 1 egg
Instructions:
- Preheat your oven to 175°C (350°F) and line a muffin tin with paper liners or lightly grease the cups.
- In a large bowl, mash the 2 bananas until smooth.
- Add the egg and honey, then stir in the flour until everything is well combined. Be careful not to overmix to keep the muffins light and fluffy.
- Pour the batter into the muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 15 minutes, or until a toothpick inserted into the center of the muffins comes out clean.
- Let the muffins cool completely in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
- Once cooled, place them on a tray and freeze for 1-2 hours to firm up.
- After freezing, transfer them to a freezer-safe bag or container for easy storage.
- When you’re ready to eat, simply microwave a muffin for 20-30 seconds or heat in the oven at 180°C (350°F) for 5-10 minutes until warm. (Tips: feel free to add extras like chopped nuts like almonds or walnuts) or dried fruits like raisins or cranberries)
