Breastfeeding berry crumble bars

Great for batch prepping and freezing

Ingredients:

  • 1 1/2 cups rolled oats
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla
  • 1 cup mixed berries (fresh or thawed frozen)
  • 1 tbsp chia seeds

✳️ Method:

  1. Preheat oven to 350°F (175°C). Line a small baking pan with parchment.
  2. In a bowl, mix oats, almond flour, sweetener, melted coconut oil, and vanilla.
  3. Reserve 1/3 of the mixture for the topping.
  4. Press the remaining 2/3 firmly into the bottom of the baking dish to form the crust.
  5. Mix berries with chia seeds and lightly mash to release juices. Spread over the crust.
  6. Sprinkle the reserved crumble over the top.
  7. Bake for 25–30 minutes, until golden. Let cool before slicing.
