Great for batch prepping and freezing
Ingredients:
- 1 1/2 cups rolled oats
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1/4 cup melted coconut oil
- 1 tsp vanilla
- 1 cup mixed berries (fresh or thawed frozen)
- 1 tbsp chia seeds
✳️ Method:
- Preheat oven to 350°F (175°C). Line a small baking pan with parchment.
- In a bowl, mix oats, almond flour, sweetener, melted coconut oil, and vanilla.
- Reserve 1/3 of the mixture for the topping.
- Press the remaining 2/3 firmly into the bottom of the baking dish to form the crust.
- Mix berries with chia seeds and lightly mash to release juices. Spread over the crust.
- Sprinkle the reserved crumble over the top.
- Bake for 25–30 minutes, until golden. Let cool before slicing.
