Egg & avocado power toast

Packed with protein, healthy fats, and essential nutrients, promoting energy, healing, and balanced hormones.

Ingredients:

  • 1 ripe avocado
  • 2 slices of whole-grain bread
  • 1 boiled or scrambled egg (you can use egg whites for less fat if preferred)
  • 1/2 cup cherry tomatoes, halved
  • 1 tbsp flax seeds (ground for better absorption)
  • 1 tsp olive oil (optional, for drizzling)
  • Salt and pepper, to taste
  • A pinch of red pepper flakes (optional, for a little heat)
  • Fresh herbs (like cilantro, basil, or parsley) for garnish
  • A squeeze of lemon juice (optional, for extra freshness)

Method:

  1. Drizzle a little olive oil for extra richness (optional), and finish with fresh herbs and red pepper flakes for a burst of flavor.
  2. Toast the whole-grain bread slices to your desired crispness.
  3. While the bread is toasting, mash the ripe avocado in a bowl. Season with a pinch of salt, pepper, and a squeeze of lemon juice if desired.
  4. Prepare the egg: either boil it to your liking or scramble it with a touch of olive oil or butter for a richer flavor.
  5. Once the toast is ready, spread the mashed avocado evenly on top of each slice.
  6. Place the boiled or scrambled egg on top of the avocado toast.
  7. Scatter the halved cherry tomatoes over the toast, and sprinkle with ground flax seeds.
