Banana bread muffins

A healthy, energy-boosting treat that’s both convenient and nourishing

Ingredients:

  • 2 bananas, mashed
  • 120g flour
  • 60ml honey
  • 1 egg

Instructions: 

  1. Preheat your oven to 175°C (350°F) and line a muffin tin with paper liners or lightly grease the cups. 
  2. In a large bowl, mash the 2 bananas until smooth.
  3.  Add the egg and honey, then stir in the flour until everything is well combined. Be careful not to overmix to keep the muffins light and fluffy.
  4. Pour the batter into the muffin tin, filling each cup about 2/3 full. 
  5. Bake in the preheated oven for 15 minutes, or until a toothpick inserted into the center of the muffins comes out clean. 
  6. Let the muffins cool completely in the tin for 5 minutes, then transfer them to a wire rack to cool completely. 
  7. Once cooled, place them on a tray and freeze for 1-2 hours to firm up. 
  8. After freezing, transfer them to a freezer-safe bag or container for easy storage. 
  9. When you’re ready to eat, simply microwave a muffin for 20-30 seconds or heat in the oven at 180°C (350°F) for 5-10 minutes until warm. (Tips: feel free to add extras like chopped nuts like almonds or walnuts) or dried fruits like raisins or cranberries)
