Ingredients:

  • 1 cup cooked red lentils
  • 1 egg
  • 1/4 cup grated cheese
  • 1/4 cup finely chopped veggies (carrot, zucchini, etc.)
  • 1 tbsp flour or ground oats
  • Salt, pepper, dried herbs

  1. Preheat oven to 375°F (190°C). Line a tray with parchment.
  2. In a bowl, mix cooked lentils with egg, grated cheese, chopped vegetables, and flour/oats.
  3. Season with salt, pepper, and dried herbs like oregano or thyme.
  4. Mix until a sticky, moldable consistency forms.
  5. Shape into small balls or patties and place on the tray.
  6. Bake for 15–20 minutes until golden and firm.
  7. Cool slightly before serving.
