Cinnamon raisin lactation scones

Ingredients:

  • 1 cup whole wheat flour
  • 1/2 cup oats
  • 2 tbsp flaxseed meal
  • 1/4 cup raisins
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 cup coconut oil or butter, cold
  • 1/3 cup milk (any kind)
  • 1 tbsp maple syrup or honey

  1. Preheat the oven to 375°F (190°C). Line a baking tray.
  2. In a large bowl, mix whole wheat flour, oats, flaxseed meal, baking powder, cinnamon, and salt.
  3. Cut in cold coconut oil or butter using a fork or pastry cutter until the mixture resembles crumbs.
  4. Stir in raisins.
  5. Add milk and sweetener; mix until a soft dough forms.
  6. Shape into a circle about 1-inch thick, cut into 6 wedges.
  7. Place on baking tray and bake for 15–18 minutes until lightly golden.
