Slow-cooked beef & vegetable stew

Rich in iron, collagen, protein, and healthy fats, it helps replenish nutrients lost during birth, promotes tissue repair, and provides long-lasting energy (serves 3-4).

Ingredients:

  • 455g grass-fed beef stew meat
  • 1 tbsp ghee or olive oil 
  • 1 small onion, diced
  • 3 cloves garlic, minced 
  • 1-inch piece fresh ginger, grated 
  • 2 medium carrots, sliced 
  • 1 medium sweet potato, diced
  • 5-7 mushrooms, sliced
  • 720ml of bone broth or stock
  • 240ml coconut milk
  • ½ tsp turmeric 
  • ½ tsp cinnamon
  • 1 tsp sea salt
  • ½ tsp black pepper
  • ½ tsp cumin 
  • A handful of dark leafy greens (spinach, kale, or chard)
  • Juice of ½ lemon 
  • Fresh parsley for garnish(optional, as needed for garnish)

Instructions:

  1. Sear the Beef by heating ghee or olive oil in a large pot over medium heat. Add the beef and brown on all sides for about 5 minutes to lock in flavor.
  2. Add diced onion, minced garlic, and grated ginger to the pot. Cook until fragrant, about 2-3 minutes.
  3. Add Spices & Veggies: Stir in turmeric, cinnamon, cumin, salt, and pepper as well as the carrots, sweet potatoes, and mushrooms, mixing well to coat with spices.
  4. Pour in bone broth and bring to a gentle boil. Reduce heat to low, cover, and simmer for 1.5-2 hours, stirring occasionally, until the beef is tender.
  5. Stir in coconut milk and dark leafy greens, allowing them to wilt. Simmer for another 5 minutes.
  6. Squeeze in fresh lemon juice for brightness.
  7. Enjoy on its own or with quinoa, rice, or sourdough bread for extra nourishment.
